Start early. After high school pretty much any sport or hobby tends to just more of the same but introducing your kids to same (and at least a few should be interested), really recaptures and builds upon the magic.
I would add that 2 yr spacing is good, except you may want a little extra space for the 3rd kid as having a 4, 2, and 0 yr old is a huge stressor. Older kids start being independent and can help out with childcare sometimes. I've seen this scenario shock a few families natalist aspirations. If you have lots of support, such as grandparents, this should not be a problem.
From my own experience, I can only recommend to start early with having children. I was late to the party. This has a lot of disadvantages. Most likely, you are not as fit anymore, if you are older. If you have kids, you have to be fit to have a lot of fun frolicking with them. In addition, the grandparents are not that old and can spend quite a few years with their grandchildren, which should be benefial for both parties.

One more thing: The research on 3-4 cousins is best for fertility is all cited and argued here: https://substack.com/home/post/p-140815317?source=queue
